Great bread starts with great ingredients, which is why at izzio we collaborated with local farmers and millers to create a custom flour made from wheat that we can trace directly to the farm. 100% traceability ensures our flour is pure, non-GMO, and without enrichments or additives. We use only authentic small batch baking methods and extended natural fermentation, where some loaves can take up to 72 hours. We choose to ferment our doughs for a long time in order to make bread that is not only more delicious but also better for you. The long fermentation creates great flavor and texture and also helps break down the starches and gluten, making our breads easier to digest. We Established Partnerships with local Colorado farmers that enabled us to trace
the seeds planted in the ground, to the wheat, harvested, to being milled at our local Provenance Mill. The result is Izzio High Plains Provenance flour that is unenriched, NON-GMO, freshly milled, flavorful, nutrient-rich and fully traceable. Baking with
this flour; adding only water and salt along with three days of fermentation creates a loaf of bread that is authentic, flavorful and fully traceable.
